Sharpening a Wusthof Fillet Knife – by Jende Industries

FIllet knives are often challenging enough to sharpen due to their flexibility, but they are only made more difficult when said fillet knife has a bolster. In this video, we sharpen up a Wusthof fillet knife, complete with flex and bolster.

One of the tricks we employ is to mark where the actual edge of the edge begins, which is further in than the plunge or grind lines meld into the edge. That overshot when sharpening on a belt grinder will leave a nasty groove at the bolster because it is so thick compared the the actual edge. With out belt grinder, we sharpened only to the marked line, which is where the sharpened edge truly begins, on a 120 grit belt followed by a trizact A30 and A16 belt. We then used a shaped 1K Naniwa Chocolate Bar sharpening stone to remove the burr formed on the belts, and followed with a buff with compound. Results are effortless “S” cuts.
