We recently received a TOG Elite Japanese Kitchen Chef Knife Santoku for testing. Bottom Line: This is one very nice knife that handles well, keeps its edge, and just plain looks good.
On the TOG website, there is a “Tech Specs” page that lists all the wonderful, interesting, and even nerdy things about the knives. I’ve decided that my review will focus around the claims on that page.

I tend to examine every factory edge closely before using a knife. Most arrive reasonably sharp, but few leave a lasting impression. The TOG knife was different. Right out of the box, the edge looked clean and well finished, so I skipped my usual inspection routine and went straight to cutting paper.
The first cut immediately caught my attention. Instead of the rough, toothy feel often associated with factory edges, the blade moved through the paper with a smooth slicing action. I made several more cuts just to confirm my first impression. If I had to estimate the finish, it felt closer to a 3,000-grit edge than the coarse factory edges commonly found on production knives.
Edge Retention in Daily Kitchen Work
Edge retention always depends on how a knife is used, but this knife performed well during regular kitchen service. After sharpening it to my preferred edge geometry and finish, it stayed in rotation alongside several of my other kitchen knives over a two-week period in a professional kitchen.
The knife received no special treatment and was maintained in the same way as the others. During that time, its edge held up just as well as, and in some cases slightly better than, my usual knives in the RC 57–58 range. Between sharpening sessions, the edge was maintained only with a honing steel.
Acuto 440 Steel Performance
The TOG knife uses Acuto 440 stainless steel with a hardness of approximately RC 58–60. In my experience, this hardness range provides a practical balance for production kitchen knives. It offers enough hardness to retain an edge during daily use while remaining resilient enough to reduce the likelihood of edge chipping.
Another advantage is ease of maintenance. The steel responds well to common sharpening equipment, whether you prefer whetstones, honing steels, or powered sharpening systems.
For this knife, I sharpened using a progression of 220, 1,000, and 4,000 grit stones, producing an edge that combined clean slicing performance with enough bite for everyday kitchen tasks.
Cutting Feel
During use, the blade felt more comparable to VG-10 than to the softer stainless steels commonly found in entry-level kitchen knife sets. The edge remained stable while cutting, and the blade moved cleanly through food without feeling overly thick behind the edge.
The knife also felt comfortable in hand. Its balance made it easy to control, while the thin blade geometry helped reduce resistance during slicing.
Final Thoughts
After spending time with the TOG knife in a working kitchen, it proved to be a dependable performer. It arrived with a factory edge that exceeded my expectations, maintained that edge well during regular use, sharpened easily, and handled comfortably throughout extended prep work.
