Sharpening steels are a standard tool in many professional and home kitchens, but not all steels work the same way. Different materials are designed for different purposes, and choosing the right one can help maintain your knife’s edge between sharpening sessions.

Jende White Ceramic Sharpening Steel

The Jende White Ceramic Sharpening Steel is manufactured using a triple-firing process that produces a ceramic hardness of approximately Mohs 9. This higher hardness makes it well suited for maintaining knives made from softer stainless steels and for users who prefer a more active edge maintenance process.

Jende Black Ceramic Sharpening Steel

The Jende Black Ceramic Sharpening Steel is produced through a double-firing process, resulting in a ceramic hardness of approximately Mohs 8. It is designed for routine maintenance of harder knife steels and works well as a finishing steel for quick edge touch-ups.

Why Choose Ceramic?

Ceramic sharpening steels remove a small amount of material while refining the edge, making them different from traditional metal honing rods.

Metal sharpening steels primarily realign a rolled edge. While this can restore cutting performance temporarily, repeated use does not sharpen the knife and may eventually weaken the edge over time.

Diamond sharpening steels remove steel very quickly. They are effective for restoring worn edges but can also remove more material than necessary if used too often, gradually changing the knife’s edge geometry. Depending on the diamond grit, they may also leave a more aggressive cutting edge.

Designed for Edge Maintenance

Jende Ceramic Sharpening Steels are intended to maintain an already sharpened edge rather than replace regular sharpening. Their ceramic hardness allows them to refresh the cutting edge while preserving the knife’s bevel and reducing unnecessary material removal.

For best results, use the Jende Ceramic Sharpening Steel on knives that have been sharpened in the 1,000 to 3,000 grit range. Regular maintenance with a ceramic steel can help extend the time between full sharpening sessions while keeping your knife performing consistently.
